Cellar techniques
The grapes are harvested by hand and placed in perforated crates to ensure the best conservation until the processing phase. They are destemmed and the must obtained ferments spontaneously. Frequent pumping over ensures the extraction of colour while limiting the extraction of more aggressive tannins. The racking is followed by malolactic fermentation and the composition of the mass: the wines are blended in varying percentages in order to keep the characteristics of this product constant. After bottling the wine, which has rested for a short period, is placed on the market.
