Cellar techniques

The grapes are harvested by hand and placed in perforated boxes to ensure the best preservation until the processing stage. It is destemmed and the resulting must ferments spontaneously. Frequent pumping over ensures color extraction while limiting the extraction of more aggressive tannins. Racking is followed by malolactic fermentation and mass composition: blending the wines in varying percentages in order to keep the characteristics of this product constant. After bottling, the wine, which has rested for a short period, is placed on the market.
