Cellar techniques
This Barbaresco is the result of a careful selection of grapes from the Campo Quadro vineyard, located in the San Cristoforo sub-zone of Neive. The fermentation takes place spontaneously by indigenous yeasts and the vinification follows particular techniques, with a tumultuous fermentation part with the cap completely submerged, then the wine obtained has a short passage in new wood followed by periods in wood of different uses characterized by frequent assemblages that lead to a pleasant and balanced wood influence. The period spent in wood is not constant but depends on the characteristics of the vintage and of the product itself, varying from a minimum of fifteen to a maximum of thirty-six months. Bottling takes place in favourable conditions, followed by a long period of refinement in the bottle, equal to the period spent in wood, before release on the market.
