Cellar techniques

This Barbaresco is the result of careful selection of grapes from the Campo Quadro vineyard, located in the San Cristoforo subzone of Neive. Fermentation takes place spontaneously by indigenous yeasts and vinification follows special techniques, with a tumultuous fermentation part with a completely submerged cap, then the resulting wine has a brief passage in new wood followed by periods in wood of different uses characterized by frequent assemblages leading to a pleasant and balanced wood influence. The stay in wood is not constant but rather linked to the characteristics of the vintage and the product itself, varying from a minimum of fifteen to even thirty-six months. Bottling takes place under propitious conditions, followed by long aging in the bottle, equal to the length of stay in wood, before release on the market.
